I was in Copenhagen and had a wonderful time. The city is culturally rich and the has a fantastic food scene. My next few posts will cover a few of my favourite discoveries.
Denmark is known for its open sandwiches, 'smørrebrød', and I was keen to try some. Aamanns tops its smørrebrød with locally sourced produce. There is a deli and a restaurant. We visited the deli on route to the Louisiana Museum of Modern Art.
The staff are attentive and nice and the deli is light and comfortable. We ordered a range of sandwiches all of which were great! We started with a warm pork liver pâté was richly studded with bacon and topped with lashing of onion and mushroom. The pâté was coarse and wonderfully seasoned.

The smørrebrød below include pickled herring, icelanic salmon, pork, and beef tartare. All of which are delicately dressed with a range of ingredients offering complementary flavours and a range of textures.

My favourites were the pickled herring, which I thought would be incredibly sour. Instead it was a fresh, the pickling brine was delicate and complemented the beetroot and shallots which also topped the rye bread. The steak tartare was very finely minced and was lightly seasoned. The tartare was topped with a tarragon emulsion, pickled cucumber, capers, shallots and potato crisps. This resulted in a lovely range of textures and flavours.

Then I had one topped with Danish Cheese (Vesterhavsost), almonds and and orange marmalade flavoured with vanilla. It was superb! We then had one topped with pork, quince, soured milk, crackling and hazelnut. Finally we had a smoked salmon with boiled eggs and plenty of dill. All were thoroughly enjoyable.

Aamaans also brews its own schnapps, in a range of unusual flavours including: rye bread; lovage; elderflower; apple, horseradish and lemon aquavit and; celeriac aquavit'. It would have been rude not to have tried one! We had the horseradish and lemon aquavit flavour, which was very unusual you could taste the horseradish without the burning sensation.

Aamanns was a lovely restaurant with the vibe of a modern bistro. It offers a lovely modern twist to a Danish classic. I would thoroughly recommend.
